I liked this turkey recipe so much, we are having it again tomorrow night! This photo shows the first step of the process – the brining. I made this at Thanksgiving, and the turkey was wonderful — so moist and juicy! yum! I am also going to be making a beef tenderloin, but that doesn’t make as pretty a picture!

I spent the night wrapping gifts at the mall. It was so busy — we actually had to turn people away when it came time to close. The guild made a lot of money for the hospital.

In other news, those of you who know my opthamalogical history will be stunned to hear that Spencer (the horse) hurt his eye today! The good news is that he just scratched it and after applying ointment over the coming weeks all should be fine. Holy Mackerel!.
